Would you believe me if I told you that the dessert pictured above contains 3 of your 5 a day and yet tastes as decadent and satisfying as a regular chocolate mousse?
If you are a regular reader, you know that eating my 5-a-day is not something that comes naturally to me. I still need to count my fruits/veg portions and plan in order to achieve my target. One evening after diner I realised that I had only ate 2 of my 5 a day! I therefore needed to have a healthy dessert to make up for it. I had read about using avocado as a base for chocolate mousse and decided to experiment with it. It came out better than I could have hoped for, was super satisfying and enabled me to eat 3 portions of fruits.
Healthy vegan chocolate mousse
- 1 banana
- 1 avocado
- 3 tablespoons of dark chocolate powder (I use this one from Green and Blacks)
- 3 tablespoons of soya coconut yogurt from Alpro
- 1 tablespoons of maple syrup (optional).
Blend all the ingredients together, add some raspberries for topping and voilà!
When I sent this recipe to my sister, she said something along the line of “hmm, yeah, I know you and your weird recipe, I will only believe it’s good when I try it”. She was not here to try it so I asked my housemate to try my “chocolate mousse”. He said “Hmm, it’s good, is it chocolate and banana?”. He could not believe it when I said it had avocado, you cannot taste it at all.
